Native American Recipes : Spicy Vegetable Skillet

The Anasazi lived over 2000 years ago where the 4 Corners Territory where Arizona, New Mexico, Colorado and Utah come together. There they built a Cliff Palace and lived in fascinating honeycombed pueblos atop the vast mesas for protection. They are famous because the Anasazi just seemed to disappear from existence with no clear explanation why.

Spicy Vegetable Skillet

1 Medium Onion, Chopped 1 Clove of Garlic, Minced 1 Tbs Olive Oil 2 Small Zucchini, Sliced 1 Cup Canned Whole Kernel Corn 2 Cups Chopped Tomatoes with Juice 1 Green Pepper, Chopped 1 tsp. Dried Oregano, Crushed 1/2 tsp Ground Black Pepper 1/4tsp. Cumin Seed 1 Tsp. Crushed, Dried Red Chili Pepper (Optional)

In a large skillet sate onion and garlic in olive oil. Add remaining ingredients and stir to mix. Cover skillet and cook over medium heat for 15 to 20 minutes. (Add a little water if mixture seems too dry.)
