Make a Foil Pack Dinner Tonight

We don’t get to camp out anymore these days but my kids and I still love to cook outside like we are camping. Take advantage of what’s left of summer and get outside and cook. If you don’t have access to an open fire, make these foil pack recipes over the grill.

Dinner
Foil Pack Pizza

Refrigerated pizza dough or biscuits (Pillsbury Grands work great)
Pizza sauce
Mozzarella cheese, shredded
Favorite toppings
Cooking spray
Heavy duty aluminum foil

Heat the grill on low with one burner. We have a 3-burner grill so we only light the far right side. You want your pizzas to bake slowly or they will burn on the bottom before the pizza is cooked through. If you are cooking over an open fire, set the grate low over the hot coals. Don’t cook over a high flame.

Make a little “plate” out of the aluminum foil with high sides. Spray the bottom of the foil with cooking spray, set aside.

Flatten a piece of biscuit or pizza dough as flat as you can. Place in foil “plate” and make your pizza as usual.

If using the grill, place your pizza over the side that is not lit. Close the grill cover for best results. You can make a “lid” out of aluminum foil if you’re cooking over an open fire. It helps the center of the pizza to cook quicker. Cook about 10 minutes and eat your pizza straight from the foil pack.

Dessert
Apples and Cinnamon

Core and slice apples into wedges. You can peel the skin or leave them on.

Cut a large piece of foil and place apple wedges in the center. Add a spoonful of butter and cinnamon to the apples.

Bring the foil edges up and around the apples and seal, leaving space at the top. Place over low flame. Shake the foil pack occasionally to coat the apples with the butter and cinnamon. Cook about 10 minutes or less, checking the apples for tenderness of your choice. Add a scoop of vanilla ice cream in the foil pack and enjoy!

Kids love to get more involved in cooking when it’s outside and they are making their own food. Parents like cooking outside even more when there are no dishes to wash. Enjoy!
