Vegan Tofu and Tempeh Pita Sandwiches

When I don’t feel like cooking, tofu and tempeh pita sandwiches are one of my go-to meals for lunch and dinner. These sandwiches are incredibly quick and easy to make, and are 100% vegan-friendly. They also contain ingredients from every food group, making these a healthy alternative to processed foods.

Ingredients:
1/4 package firm tofu
1/4 package five grain tempeh
1/2 teaspoon chili powder
1.2 teaspoon sea salt
Hummus
Spinach leaves
Alfalfa sprouts
Diced tomatoes
Avocado slices
Pita
Vegan cheese slice

1. Crumble the tofu and tempeh together in a bowl. Sprinkle the chili powder and sea salt over the mixture and stir.
2. Pour the mixture into a non-stick skillet and cook the tofu and tempeh over medium heat for about five minutes.
3. Fold the pita in half. Spread some hummus over half of the pita.
4. Pour the tofu and tempeh mixture over the hummus.
5. Add some spinach leaves on top of the tofu and tempeh.
6. Add some alfalfa sprouts on top of the spinach leaves.
7. Add some diced tomatoes on top of the alfalfa sprouts.
8. Add some avocado slices on top of the tomatoes.
9. Finish off the sandwich with a slice of vegan cheese and enjoy.
