Making Butternut Squash in My Crockpot

Yesterday was hot and humid here in the Northeast. I have lots of butternut squash in my garden. I’ve been picking some everyday. I thought Sunday was a good day to make my squash as a special treat. I’ve always made it in the oven but as I said it was hot and very humid.

I thought maybe I could try cooking my squash in my crockpot. I’d never done it before so I wasn’t sure how it would turn out. I didn’t want to heat up the kitchen so using my crockpot sounded like a good idea. I brought my crockpot out and plugged it in. I was a little nervous because I didn’t want to ruin my squash. I really didn’t know what the result would be.

I had 4 butternut squash that were on the smaller side so I thought I’d use them. I knew they would fit in my crockpot. That’s really why I picked the 4 that I did. I got out butter, brown sugar and a cup of water. I washed my butternut squash in the sink and set them aside to dry.

My next step was to cut the squash down the middle and take the seeds out. This has never been easy for me. I used my big knife. I did end up cutting myself but it was nothing a good band aid wouldn’t fix. Hopefully if you try this recipe in your crockpot you will be careful with your knife.

I took all the seeds out of my squash and put them in a bowl to be discarded later. I carefully positioned each squash so that it would not tip. This is not an easy thing to do but after careful attention to this part I had them just the way I wanted them. I placed real butter and brown sugar in the area of the butternut squash that I took the seeds out of. Next I added one cup of water to the bottom to make sure nothing would stick or burn. I wasn’t sure if that would happen but I thought better safe than sorry.

I turned my crockpot on high. I didn’t start this project till around 2:00 in the afternoon so I wanted them to cook by dinner. I didn’t know if they would but I thought worst scenario they would have to cook for hours and we would eat them today for dinner. This was a trial and error idea so I just went along the best I knew how. When I do things like this sometimes it works and sometimes it doesn’t.

At 6:00 we were ready to eat dinner. I was a little nervous about seeing my butternut squash. I really didn’t know if they were cooked through or maybe they were mush. To my pleasant surprise my squash was cooked and it was just perfect. They didn’t turn into mush and they were tender.

Cooking my butternut squash in my crockpot turned out to be an excellent idea. The kitchen wasn’t hot from the oven and the squash was cooked to perfection. I count this as a success. I wanted to share it with everyone because this time of year it’s very easy and inexpensive to cook butternut squash. If you should try making squash with your crockpot I think you will be very pleased.
