Neck bones and Pinto Beans

I love this combination of neck bones and pinto beans. Actually I have become quite fond of pinto beans. I usually use about half of a small package of pinto beans in my slow cooker. Most of the time I will soak my beans in cold water for about an hour before cooking them. I just believe that helps the beans to cook even faster. I then put about 3 cups of water and 2 pieces of salt pork sliced. You can buy the salt pork in the store already sliced in the package. Once the pinto beans are half done about 3 or 4 hours, I add the neck bones. Sometimes I will just cook my neck bones separate in a pot and then add them to the pinto beans. A lot of this depends on how I may be feeling that day. Note: that neck bones will cook much quicker in the slow cooker than separately in the pot, that is a big difference. Also, note sometimes I have substituted cabbage instead of pinto beans. That makes for a great meal too. Then just make your Jiffy mix cornbread muffins in the oven and your meal is all done. Jiffy mix corn muffins only take 20-25 minutes to bake in the oven.

Chicken Noodle Soup

Chicken noodle soup is one the greatest meals I like in the wintertime. I usually boil a chicken cut up. You can buy the chicken whole or by the chicken cut up. I like the chicken cut up already. It just saves me an extra step. Boil the chicken until done. Once the chicken is done, I separate the chicken and the skin from the bone after it has cooled. I then mixed the chicken, a large can of tomato soup, and my noodles. I have tried the mixed vegetables which is more nutritious for you instead of noodles. I like corn and potatoes substitution sometimes for the noodles. I let this all simmer in my slow cooker for about a couple of hours until done.

Chili

I usually put about ½ small bag of pinto beans in my slow cooker with about 3 cups of water. It usually takes the beans about 3 or 4 hours to cook. I know I cook them until tender. The ground beef I usually brown in the skillet and then drain. After they have drained, I add a package of Chili mix and ½ cup water and mix well. Then once the pinto beans are done I drain them as well. Now I mix the chili and ground beef mix and a large can of tomatoes sauce in the slow cooker and simmer for about 30 minutes to 45 minutes. I use pinto beans quite often. I like these much better than the traditional kidney beans and the flavor is totally different. I just love it.
