Hominy – Little Balls of Nutrition

The next time you do your grocery shopping and find yourself on the canned vegetable aisle, pick up a few cans of hominy. Hominy is maize, or corn, that goes through a special process to remove the outer covering of each kernel. It is an extremely versatile vegetable. You can add it to a myriad of meals not only to increase nutrition but to give a little zip and added interest to an average recipe. Hominy has vitamin A, Calcium and Iron and you can add it to salads, serve it as a side dish, or shape it into patties for frying.

Add eye-appeal to your chili recipe. About 15 minutes before you remove the chili from the stove, open a can of hominy, pour off the liquid, and transfer it into the chili. Stir the mixture with a long-handled spoon until all is well blended. The hominy not only makes each serving more attractive but helps to extend the recipe.

Include hominy in a stew to replace a starchy vegetable such as potato or rice. Hominy makes an ideal substitution, especially just before payday, when your grocery and pantry supplies have dwindled.

Dish-up a spectacular side-dish that your friends and family will rave about. Hominy will do the trick. Follow the heating instructions on the can’s label. When the hominy reaches serving temperature, drain off the excess liquid and toss the hominy with a little butter (or margarine) and add salt and pepper to taste. If you’re adventurous, blend in a shake or two of garlic powder or onion powder and serve.

Heighten a salad’s pizzazz with hominy. Chill the can of hominy in the refrigerator for an hour or two before using. The cold hominy will complement the crispness of the salad greens and other vegetables. Open the can, pour off the liquid, add the hominy to the greens, and toss until everything is well blended.
