Holiday Appetizer: Christmas Turkey and Roasted Red Pepper Flatbread Sandwich Bites

Are you looking for a new appetizer to wow your friends and family with this holiday season? If you have children like I do, you understand that sometimes appetizers that appeal to adults get different reviews from kids and cause their little noses to turn up. In our family, part of the fun of the holidays is playing games together while enjoying a variety of yummy appetizers and goodies to snack on. Instead of letting the kids fill up on junk food and unhealthy snacks, I try to offer an array of tasty, yet healthy, options as well. Our predicament? One child loves meat but doesn’t like many vegetables. The other child loves vegetables but couldn’t care less about eating meat. My husband and I like most foods but often get stuck eating whatever the kids can agree on. What have they agree on? They’ve decide cream cheese is one the greatest things ever created, food that is multi-colored is cool, and everything tastes better when it’s bite-sized!

I created these Christmas colored sandwich bites with kids and their parents in mind. The mixture of bright colors, cream cheese, and bite size sections that even little hands can handle combine to make an appetizer children won’t be able to resist. They’ll forget all about how good the food is for them and focus on how cool it looks and great it tastes! Adults will love them, too, because they are easy and inexpensive to make and are good for you. The combination of the roasted red pepper, Hillshire Farm Deli Select Ultra Thin Oven Roasted Turkey Breast, cream cheese, and spinach will tickle the taste buds of family members young and old.

Ingredients:
For the spread:
Roasted red peppers (7 oz. jar)
1 tablespoon red wine vinegar
2 teaspoons minced garlic
2 teaspoons olive oil

For the sandwich:
Cream cheese
Hillshire Farm Deli Select Ultra Thin Oven Roasted Turkey Breast
Whole wheat garden spinach flatbread
Baby spinach leaves

Directions:
To make the roasted red pepper spread:

Combine entire jar of roasted red peppers, minced garlic, red wine vinegar, and blend in the food processor. Season with salt and pepper to taste and drizzle the olive oil on top. Pulse the mixture a few more times and allow it to chill and thicken in the refrigerator for about 20 minutes.

To create the sandwich:
Lie one piece of flatbread flat and coat the side facing up with a generous layer of cream cheese. Scoop a small spoonful of the roasted red pepper spread in the center of the flatbread and smooth it over the entire surface. Layer 2 to 3 slices of Hillshire Farm Deli Select Ultra Thin Oven Roasted Turkey Breast on one half the flatbread. Then layer 4 to 5 leaves of baby spinach. Add a second layer of both the turkey breast and spinach. Start at the end where the turkey and spinach are layered and slowly fold the flatbread sandwich into a tight roll.
Place the rolled sandwich on a cutting board and slice it into small sections, generally 3 or 4 sections works best to keep the sandwich bites from falling apart.

To serve the sandwich bites:

The sandwich bites are best when served immediately. If you must wait, be sure to chill them until you are ready to serve them. Right before placing them on the table, drizzle a small amount of the roasted red pepper sauce on the plate. Arrange the Christmas turkey and roasted red pepper flatbread sandwich bites on the serving plate, add a dollop of cream cheese, and garnish with a few extra spinach leaves to complete the dish.
