The Green Bough Hotel is the type of accommodation which makes you feel like spending time around the hotel and absorbing their wonderful atmosphere. Built in the Edwardian / Victorian-style, the Green Bough was named “Small Hotel of the Year,” “Hotel of the Year,” “Most Excellent City Hotel,” and has won many other awards. We were welcomed in the Champagne Bar Lounge, a plush sitting room where guests enjoy drinks, canopies, sandwiches, cakes and afternoon tea. Looking at the large fireplace, each side is adorned with bedposts representing England, Scotland and Whales. Guests should walk around the room to see the 400 year old bedding box, Irish Gaelic writing, an original snooker score board made in 1860 of Mahogany from India and other antiques.
The owners, Philip and Janice Martin have restored the building and although there are only 15 guest bedrooms they are luxury themed. Philip and Janice did not miss a detail in decorating the guest rooms. The beautifully carved wood and cast iron four poster beds draped with fabrics, the Arley Junior Suite’s Roman-theme, the Bramhall Suite’s original Louis XIV bed, and all of the Italian touches make choosing your accommodations very difficult.
I was surprised to find so many gourmet restaurants in England’s North Country even in Chester, a small town of around 100,000 people. The Green Bough Hotel’s Olive Tree Restaurant is recommended by the Michelin Guide. Tim Seden, Head Chef, designed menus that Las Vegas chefs would admire. All items in the menu are produced and sourced from local suppliers. The Aberdeen Angus is raised in nearby Scotland, Welch lamb is two miles from Northern England’s border. Chef Tim calls their cuisine classical French with a modern English twist. For his set seven course Table d’hote Menu, guests choose one of five appetizers, one of five entrees, one of the five desserts, as well as canapés, ices, a cheese board and pastries. Or you may wish the champagne and canapé gourmet menu. Chef Tim is ready for parties in their roof top garden, banquet room or restaurant.
