How much yeast should be used to produce 2 gallons of beer?
Q: I am making a Pumpkin Porter and I’m not sure if the yeast I pitched is working. I have the beer lagering in a controlled 72 degrees room and if I dont see any signs of the yeast working in the next day (which would make 3 days) then I’m thinking about adding more yeast and it will prolly be a liquid yeast. How much should I put in? Thanks
A: The liquid yeasts come in pouches enough to ferment 5 gallons, usually. It really isn’t possible to “over” pitch a beer since the yeast must multiply millions of times to reach the point where the population begins active fermentation. Just add the liquid yeast (be sure to follow directions on the pouch) and good luck.My guess too is that you put in your first yeast when the wort was too hot and killed them.

Q: We just mixed a batch of Mr. Beer (Pale Ale) and due to some miscommunication in the kitchen, we accidentally added two packets of yeast, rather than one. Is this going to ruin our batch, or is there anything we can do to counter-act the extra yeast? There’s not enough room in the brewing keg to add another set of “other ingredients” to double the whole batch of beer, so we don’t know what to do?! Help!?
A: This is fine. You will simply be speeding up the process a bit. When the fermentation is actually completed and you are ready to serve it, you just have to be a bit more careful not to stir up the sediment at the bottom, which is of course dead yeast.
