Wine as a Cooking Enhancement

The alcohol content in wine disappears with heating leaving only the aroma and enticing flavor. Cooking wines will usually have salt added. Drinking wines are either “dry”, “sweet”, or “medium.”

Dry red wines include: Baco Noir, Barbera, Bordeaux, Burgandy, Cabernet, Sauvignon, Chianti, Clarets, du Rhone, Gamay, Gamay Beaujolais, Grignolino, Grignolino Rose’, Pinot Noir, Pinot St. George, Rioja reds, Zinfandel, Cotes, and Zinfandel Rose’.

Dry white wines include: Dry Rhine, Dry Sauterne, Dry Semillon, Dry Sherry, Chablis, Chenin Blanc, Green Hungarian, Grey Riesling, Dry white Vermouth, Johannisberg Riesling, Muscadit, Pinot Blanc, Pinot Chardonnay, Soave, Sylvania Riesling, Taylor Extra Dry, White Burgandy,and White Chiante.

Sweet red wines include: Aleatico, Kosher Concord, Malaga, Red Malvasia, Ruby Port, Sweet Red Vermouth, Tawny Port, and Tinta Port

Sweet white wines include: Angelica, Barsac, Muscat de Frontignan, Haut-Sauterne, Malvasia, Marsala, Muscat, Cream sherry, Mucatel, Sauterne, Sweet Semillon, Tokay and White Kosher

Medium red wines include: Anjou Rose’, Catawba Red, Concord, Grenach Rose’, Lake country red, Lambrusco, Medium-dry Sherry, and Vino Rosso

Medium white wines include: Gewurztraminer, Lake Country White, Liebfraumilch, Orvieto, Rhine, Riesling, Vouvray, and White Anjou.

Burgandy Chicken
6 chicken breast halves
1/2 cup flour
1 1/2 tsp sea salt
1 tsp garlic powder
1 tsp white pepper
12 bacon slices
1/2 cup chopped onion
1 large poblano pepper chopped
1 cup chopped fresh mushrooms
12 baby carrots
8 oz canned chicken broth
1 1/2 cup burgandy
8 oz shredded mozerella
1 tsp thyme
1 tsp oregano
2 tbsp parsley
1 tsp basil
1 bay leaf
par boil baby carrots about 12 minutes from boiling point
coat chicken with flour
fry bacon and remove from skillet
preheat oven to 350 degrees
fry chicken in bacon grease until well browned
salt and pepper while browning
remove chicken to baking dish
saute onion, poblano pepper and mushrooms in bacon grease, sprinkle evenly over chicken
add drained carrots to chicken
add garlic,thyme,oregeno,parsley, basil, bay leaf
add crumbled bacon
add broth and burgandy
cover with foil and bake 40-45 minutes until thick and bubbly
remove bay leaf
sprinkle with cheese and serve

Pork Chow Mein With Wine
2 lbs smoked cured ham or pork chops deboned and cut in thin strips
2 1/2 cups strong beef boullion made with 1 1/2 cups dry white wine and 1 cup water
2 stalks celery cut in diagonal thin pieces
1 sweet vidalia or red onion diced
2 Tbsp soy sauce
1 can beefy mushroom soup
4 tbsp corn starch
1 pound frozen or canned oriental vegetables
Serve with chow mein noodles or rice
Grease a 10″ aluminum skillet and heat meat thoroughly add boullion, celery, onion and soy sauce. Heat until celery is very tender at very low heat-simmer 20-25 minutes. Mix cold soup with cornstarch add to ingredients, add chinese vegetables. Heat 15 minutes or until vegetables are appropriate texture.

Sassy Meat Loaf
3 lbs hamburger
2 cups crushed cracker crumbs ( use a flavored cracker of your choice) Cheese or garlic are good choices
Mozerella and sun dried tomato is another good choice
2 eggs whipped
2 tbsp dry onion flakes or 1 pkg onion soup mix
2 tsbs worchestershire sauce
2 tsp sea salt
2 tsp dry mustard
2 tsp pepper
1 tsp sage
1 tbsp garlic powder
1 cup sweet red port wine
3/4 cup shredded carrots
1 stalk celery celery chopped
Mix well and place in oven dish Bake at 350 degrees about 55 minutes

Mushroom Gravy
Brown 4 tbsp flour in 4 tbsp butter add 1 can cream of mushroom soup and 1 can beefy mushroom soup and 1 cup beef boullion and 6 drops Kitchen Bouquet heat until thickened.
