Kids, Dinner Will Be Ready in an Hour

I don’t know about you, but there never seems to be enough hours in my day. Between getting the kids to and from school, cleaning the house, and going to work, my day is almost over, and I haven’t even had time to think about dinner yet. What is all that noise I hear in the background? It’s the kids screaming and yelling telling me how hungry they are! So because I am so tired and frustrated at the end of my day, I end up screaming and yelling back at them which only makes my day seem even longer and more frustrating.

In the last year, I have discovered one meal that my kids absolutely love including my three year old. My husband loves it because it is a hearty and filling meal. I love it too because of how simple it is to make. It takes a few canned ingredients, some healthy ground turkey, an hour on the stove, and dinner is served! Mama is happy, and therefore the kids and the hubby are also happy. Please do not get me wrong. Even though this recipe will feed an army, it is also great for a serving of one. It will just mean many days of delicious leftovers, and it tastes even better on days 2 and 3. I have seen many renditions of this taco soup, but here is my tweeked version. On those cold winter evenings or on a day when all you have time for is fast food, just throw all the ingredients listed below in your favorite big pot on the stove, simmer for an hour, and enjoy!

Ingredients:

2 pounds of ground turkey (cooked) 2 cups of diced onions (or half a bag of frozen chopped onions when you are feeling a little lazy) 1 (15 1/2-ounce) can of pinto beans 1 (15 1/2-ounce) can of kidney beans 1 (15 1/2-ounce) can of black beans 1 (15 1/4-ounce) can of whole kernel corn (drained) 2 (10 ounce) cans of Rotel Original Diced Tomatoes & Green Chilies, undrained (I prefer mild) 1 (14 1/2-ounce) can of Mexican-style stewed tomatoes 1 (4 1/2-ounce) can of diced green chiles 1 (1 1/4-ounce) package of taco seasoning mix 1 (1-ounce) package of ranch salad dressing mix

Optional Ingredients:1 (4.6-ounce) can of black olives, drained and sliced 1/2 cup of green olives, sliced Corn chips, for serving (tastes great with cornbread too) Sour cream, for garnish Grated cheese, for garnish Chopped green onions, for garnish Jalapeno peppers
