Quick Salads with Variety to Please

Everybody likes a side salad at their meal but often it takes extra time adding it to the rest of the meal preparations. Here are some we have enjoyed that can be made ahead of time. Make the night before or in the morning and take out at supper time.

CRANBERRY APPLE SALAD
Ingredients:
2 boxes raspberry Jello
2 cups boiling water
2 cups cold water
1 green apple
1 seedless orange
2 cups fresh cranberries
1/4 cup chopped pecans
Directions:
Empty Jello boxes into 2 quart mixing bowl. Add boiling water. Stir until completely dissolved. Add cold water. In a food processor finely chop apple, orange, and cranberry. Add to jello mixture. Add pecans and mix well. Chill for at least 4 hours.

CRANBERRY RELISH SQUARES
Ingredients:
3 packages raspberry flavored jello
2 cups boiling water
1 14 oz. can whole berry cranberry sauce
1 cup chopped pecans
1 11 oz. can drained mandarin oranges
Directions:
Place jello in a large mixing bowl. Add boiling water and stir well until completely dissolved. Add cranberry sauce, pecans, and oranges. Mix well. Pour into 8 inch square baking dish. Cool for 4 hours. Cut into 16 squares.
