Joe’s Seafood, Prime Steak and Stone Crab Restaurant, in Caesars Palace-The Story of Stone Crabs-EXCLUSIVE INTERVIEW with Jason Caparelli, General Manager-Las Vegas-

Stone crabs are different from all of the other type of crabs and any of the seafood. Jason Caparelli, the General Manager, of Joe’s Seafood, Prime Steak and Stone Crab Restaurant, inside Caesars Palace, took me on a tour of the kitchen. He explained, “We actually get our stone crabs from the Florida Keys, in the Gulf of Mexico. They catch the crabs and remove one claw then the crab goes back in the water. It is a fully sustainable product. They actually re-grow a claw. That’s why we take one claw and leave one so they can defend themselves. All of our stone crabs are shipped directly from Joe’s Stone Crab in Miami Beach, Florida to Las Vegas. It all started back in 1913 Joe Weiss is who made stone crabs famous.

It was just a little shack in the beginning, right on the beach, a little diner. He had beach- front property when it was very inexpensive and he did start with a small seafood shack, a diner, and a friend approached Joe with the stone crab and asked, ‘Have you ever seen this before?’ and Joe said, ‘No”. The two men wondered how can you cook this and finally figured out most of the meat was in the claw. They boiled the crab claw, chilled it and served the claw with Joe’s famous mustard sauce. In two years, the Joe’s in Miami Beach will be a hundred years old and still going strong. Joe’s makes their specialties stone crabs, hash brown potatoes and key lime pie even though they have a full menu that’s what the people want there.

Here in Las Vegas, when guests arrive at Joe’s Seafood, Prime Steak and Stone Crab Restaurant, the wall-to-wall murals, pictures and historic menus tell the story of the early days of the original Joe’s Stone Crabs to take you back to that era. These are timeless rooms. The demand for stone crabs is still going strong, they are hot commodities.

Stone crabs are cracked and all you have to do is peel the shells off and throw them in the shell bowls. We do all the work for you. Some guests are stone crab aficionados. That’s why they come here. Joe’s experience also includes our wonderful jumbo Alaskan king crab legs served on platters. We have a source for king crab legs a very different type of crab.

The full menu is available whether you wish to “people watch” on the outside terrace or dine in our beautiful dining room and at the bar.

We arrange a lot of business and social functions with one wedding a week. Whether the guests wish a stone crab party, appetizers, cocktails or a full dinner, Joe’s is ready to accommodate them. The Rose Garden is the perfect place for weddings and parties with plenty of room to set-up a dance floor.”
