Christmas Breakfast – 3 Quick & Easy Make Ahead Recipes

Before you know it, Christmas will be upon us. And if you are anything like me, you will still have, what feels like, a million little things left to do. Why not cross one more thing off your ever growing “To Do” list by planning an easy, make ahead Christmas Morning Breakfast?

Crock Pot Kickin’ SouthWestern Egg Bake

Ingredients

1 pound breakfast sausage (or sausage of choice)

1 pound ground turkey (or chicken, pork)

1 large sweet onion (chopped)

2 cloves garlic chopped

1 red pepper (chopped)

1 can green chilies (chopped)

1 can mexicorn (drained)

2 cups tater tots (or other bite sized potatoes)

1 pound sharp cheddar cheese, Swiss cheese or combination of both (shredded)

18 eggs

Salt and pepper to taste

¼ cup Salsa (or to taste)

Directions (Prep time: 30 minutes)

* In a large skillet cook sausage and ground meat until crumbled and no longer pink.

Season to taste. Drain.

* In a crock pot, place the ingredients in order as follows: half of the

browned meat, half the potatoes, half of the onion, half of the garlic, half of the red pepper, half of the

green chilies, half of the mexicorn and half the cheese.

* Repeat the layers with the remaining portion of the ingredients.

* In a mixing bowl, beat the eggs and salsa together. Season with salt and pepper. Pour over the top of the ingredients in the crock pot.

* Cover the crock pot and cook on low heat for 8-9 hours.

* Approximately 12 servings.

Apple-Cranberry French Toast Casserole

Ingredients

1 C. brown sugar

1 tsp. ground cinnamon

1 tsp. nutmeg

1/2 C. butter, melted

3 apples, peeled, cored and sliced

1/2 C. cranberries (or raisins)

1 1 lb. loaf French baguette, cut into 1 inch slices

6 eggs, lightly beaten

1 1/2 C. milk

1 Tbs. vanilla extract

2 tsp. ground cinnamon

Directions (Prep Time: 30 min)

* Grease a 9×13 inch baking dish.

* In a large bowl, mix together brown sugar, 1 tsp. cinnamon and 1 tsp. nutmeg.

* Mix in melted butter.

* Stir in apples and cranberries until evenly coated.

* Pour into prepared pan. Arrange bread slices in an even layer over apples.

* In the bowl, whisk together eggs, milk, vanilla and 2 tsp. cinnamon.

* Pour over bread, making sure every slice is fully soaked.

* Cover with aluminum foil, and refrigerated overnight.

* In the morning, preheat oven to 375 degrees.

* Remove dish from refrigerator while the oven is heating.

* Bake covered for 40 minutes.

* Remove cover, and bake 5 minutes.

* Let stand 5 minutes before serving.

* Approximately 12 servings.

Breakfast Quiche

Ingredients

2 (12 ounce) packages frozen hash brown potatoes

1/3 cup butter, melted

1 cup cooked diced ham (or cooked & crumbled sausage or bacon)

1 cup shredded Monterey Jack cheese (or Colby & Monterey Jack cheese blend)

2 eggs

1/2 cup heavy whipping cream

Salt & Pepper to taste

Directions (Prep Time: 20 min)

* Preheat oven to 425 degrees F (220 degrees C).

* Squeeze any excess moisture from the potatoes and combine them with the melted butter or margarine in a small bowl. Press this mixture into the bottom and sides of an ungreased 10 inch pie pan.

* Bake at 425 degrees F (220 degrees C) for 25 minutes.

* Remove pan from oven and arrange the ham and cheese evenly over the potatoes.

* In a separate small bowl, beat together the eggs, salt, pepper and the cream.

* Pour over the ham and cheese.

* Return pan to oven and bake for 425 degrees F (220 degrees C) for 30 minutes, or until the custard has completely set.

* Allow to cool, then cover and place in refrigerator overnight.

* In the morning, preheat oven to 375 degrees.

* Remove dish from refrigerator while the oven is heating.

* Bake covered for 40 minutes.

* Remove cover, and bake 5 minutes.

* Let stand 5 minutes before serving.

* Approximately 4 – 6 servings
