How a Gluten Free Diet Set Me Free!

I have always felt that there should be a support group for those of us who suffer with migraines. I cringe every time someone tells me “It’s just a headache”.

After exhausting every medication on the market, relaxation techniques and acupuncture I finally decided to try going Gluten Free (despite my Dr.’s dubious expression and strong doubts). Apparently this diet provided not just migraine relief, but a myriad of benefits including weight loss, improved digestion and raised energy levels. It was worth a try.

I went through my cabinets and separated out all products, containing gluten after very easily finding lists of approved foods online. I bought myself only fresh meats and produce. Within two weeks, I had not had a single migraine. Within a month my energy levels amazed me, I could think, I was jumping out of bed in the morning and lost 8lbs.

This simple to follow diet has changed my life. I have been sharing my success with all of my friends on Facebook and have so many stories that going Gluten Free has also helped with Chronic Fatigue Syndrome, IBS even Fibromyalgia!

A couple easy recipe suggestions:

Tossed Chicken and Bean Salad:
In a large bowl mix the following:

Baby spinach or mixed greens Chickpeas Diced celery Chopped summer squash Sun dried tomatoes Feta cheese (use according to your taste!!) Fresh chopped chicken

In a separate bowl mix about 6 to 7 tablespoons of extra virgin olive oil, a few splashes of apple cider vinegar and add 8 – 9 tablespoons of lemon juice. Mix the dressing well and pour over your ingredients then toss the salad to really integrate all of the ingredients and flavors.

Delicious Chicken Salad:

In a large bowl mix the following:

Diced chicken A small amount of mayonnaise Diced celery 2 chopped plum tomatoes 1/4 cup chopped onion 2 cups of plain Craisins

Mix well!!

Cut the core out of 4 yellow peppers, wash thoroughly.
Coat with olive oil and bake for 10 – 15 minutes in a 350 degree oven.
Once cooled scoop your chicken salad into the peppers and you have four lunches ready to go!!

Happy does not begin to describe how I feel now that it has been six months, my migraines are gone, I lost a few pounds and have more energy than ever. I have broken through the haze and am truly living!
