Cebuano Chicken Adobo

It is generally known that Filipino women are excellent lovers and good cooks. In particular, Cebuano ladies serve good meals. If you have not tasted their interesting cuisine, enjoy this Cebuano chicken adobo treat.

After cleaning a chicken carefully, cut it into serving-size pieces. Put the chicken pieces in a bowl, and pour soy sauce over them. Set it aside.

Slice s bell pepper, a medium-sized onion, and eight cloves of garlic into small pieces.

Put a pan on the stove and pour some oil into it. Make sure the pan is dry before pouring the oil in it. Otherwise the oil will spatter. Heat it until it is sufficiently warm. Olive oil is an excellent oil to use, but other good vegetable oils also serve the purpose.

Put the onion, garlic, and pepper pieces into the pan. Stir it gently for about 30 seconds until the mixture is turning brown. Then add the chicken to the mixture and cook for 30 to 40 minutes.

Stir the mixture periodically so that it will not become burnt on the bottom. Check periodically to see if the chicken is done. The texture will look crispy and greasy when done.

Rice is a staple in Philippine cuisine, so chicken adobo is generally served with white boiled rice.

Note: Cebu is one of the larger Philippine islands. However, you can find Cebuanos living elsewhere, especially northwest Mindanao. The source of my information is an excellent Cebuano homemaker named Merian Zimmermann.
