Ways to Use Up Over-ripe Bananas

Almost everybody, at one time or another, has thrown away an over-ripe banana. When they start to get brown spots, they’re no longer very good to eat by themselves since they start to get mushy. But, just because you bought too many bananas and can’t eat them before they go bad doesn’t mean you’re doomed to throw them away. Over-ripe bananas have a wonderfully strong flavor that can be useful for many different purposes.
The most obvious use for over-ripe bananas is banana bread. When it comes to banana bread, the riper the banana, the better. Once those tiny brown spots start to appear on the bananas, break out your favorite banana bread recipe. If you don’t have enough bananas to make banana bread at the moment, freeze the ones you do have for future use. Just toss them in the freezer with the peel on and thaw them whenever you’re ready to use them.
You could also turn ripe bananas into a yummy frozen ice cream-like treat. Cut the bananas into small pieces and freeze the pieces. Grind up the frozen banana pieces in a blender until the form a smooth paste. Serve the banana “ice cream” as is, or with your favorite topping. This is the perfect summer treat for vegans or anyone with milk or egg allergies.
Use ripened bananas as a healthy egg substitute in baking goodies. About 1/4 cup mashed banana is equal to one egg. This works especially well in chocolate treats, since the chocolate masks the flavor of the banana to make it undetectable.
Cut up ripe bananas and dip them in melted chocolate freeze the chocolate covered banana pieces on a piece of parchment paper for a chocolate-y frozen treat anytime!
Throw some cut up bananas (frozen or otherwise) into a blender with some ice, yogurt, and other fruits for a quick smoothie. The riper the banana, the stronger the flavor of the smoothie will be.
Slice up ripe bananas and fry them in oil until crispy. These fried bananas are an indulgent treat that taste great with sour cream on top.
