Using Leftover Turkey for Breakfast, Lunch and Dinner

I use leftover turkey for more than just turkey sandwiches.

Preparing a fresh turkey can provide enough meat for a variety of meals including breakfast, lunch and dinner recipes. The only thing I haven’t used turkey for is dessert.

I like to prepare turkeys when I see the fresh ones in the grocery store, even if it’s not a holiday. Turkey is a versatile meat that has a flavor mild enough for all three meals of the day.

Turkey for breakfast

My favorite way to use turkey for breakfast is to include it in my crepe recipe. I chop up the turkey and add it to the crepe filling. Turkey pairs well with dill and Swiss and cheddar cheeses. For a fancier crepe, try finely topping the turkey crepe with leftover cranberry sauce. I sometimes use turkey in omelets as well.

Turkey for lunch

Some of the obvious ways to use turkey for lunch is to make an open-face turkey sandwich with leftover gravy. Another favorite turkey recipe is turkey tetrazzini. I cook spaghetti and set aside. On the stove, I use a little butter, flour, milk, mushrooms, onions and sherry wine to make the sauce. I mix the sauce with chopped turkey and the spaghetti and then sprinkle with salt, pepper and parmesan cheese.

Turkey for dinner

For dinner, I use chopped turkey in puffed pastry shells. To make the meals stretch, I often reserve cream sauce from the turkey tetrazzini dish. The only ingredient I need to add is peas. I bake the puffed pastry shells and then pour the turkey cream sauce with peas over the shells for a hearty dinner. Another way to plan ahead is to reserve pie crust from the holiday baking to use for a turkey pot pie recipe.
