Carrot, Apple, and Pumpkin Drink

I do not always have an easy time with eating the daily recommended portion of vegetables. One of my favorite ways to get some vegetables in my diet is with carrot drinks mixed with apple. I have a Vitamix, so it makes it easy to make a great drink. I add different ingredients at different times, but I really liked my latest concoction and I hope you will too.

Ingredients

1/4 cup of water

Single serving plain Greek yogurt

A little less than 1/4 cup of pumpkin seeds

2 carrots cut in half

1 apple cored and sliced (Gala or Fuji are my favorites)

Fresh Peppermint

Cinnamon

Fresh Stevia

1/2 cup ice

I added all this to my Vitamix and started on variable 1, increased the speed to ten, and then switched it to high for about 30 seconds or until everything is mixed.

What I like about the drink is that it makes for a delightfully sweet treat that is healthy. The color is not the best, but I am able to see past that unlike my husband.
