Wedding Love Note Chocolates

It’s fun to work with modeling chocolate and, if you haven’t tried it yet, why not give it a shot for your upcoming wedding? Mold little love notes for your guests and, after they enjoy looking at them, they can eat them. The love bites are perfect as place markers, party favors, or even Valentine’s Day treats. You can make them any way you want them so they’re great for many different occasions.

Purchase a 14oz bag of candy melts from a craft store or a business that features candy-making supplies. It’s up to you what color the candy melts are. White is great for a wedding but you could also buy pink, purple, or even blue candy melts. Since they’re available in many different colors you’ll have no trouble choosing a color that will match or coordinate with the wedding colors.

Pour the candy melts into a microwave-safe dish and, according to package instructions, melt them. Stir well then pour in a half-cup of light corn syrup, and stir it well. Put plastic wrap on a cookie sheet and lay the dough ball on it. Spread it out to be about a quarter-inch thick and then cover it with another sheet of plastic wrap. Leave the mixture alone for about three hours. Knead the modeling chocolate, using a bit of cornstarch to keep it from sticking to the surface or your hands.

Roll the chocolate out so that it’s about a quarter-inch thick and cut a square to be the edible envelope. Turn the square a little so that it takes on a diamond shape in front of you. Fold the left and write points into the middle. Then, bring the bottom point up to the same area as the other two points, and press it a little to stick.

Take a little more of the molding chocolate and put a drop of red food coloring on it. Knead it while wearing disposable gloves until it turns pink. Roll it out and use a tiny cookie cutter – must be at least somewhat smaller than the envelope – and cut out a heart. The heart will be the note that goes with the envelope.

Use a food pen to write “Love”, “Welcome”, “Thanks”, or another message, on the heart note. Lay the note on top of the envelope and set one in front of each place setting.

There are many variations you can do to the wedding love notes. You can make stripes or other designs on the envelope, using the food pen, and you can change the heart shape to a different shape. No matter what shapes, or what designs, the edible love bites are scrumptious, adorable, and fun to make.
