Sushi Roku- Restaurant Review- “Sushi Roku 2.0 Has Arrived!” Exciting New Menu- NOW Sushi Roku 2.0- Inside Caesars Palace Forum Shops, Las Vegas

I attended the launching party for the Sushi Roku 2.0 Restaurant inside Caesars Palace Resort’s Forum Shops. This glamorous setting had very little hint that it was a Japanese restaurant. Their original designs were bold and dramatic especially startling in the dining room with beams hanging down from the ceiling. With such an avant garde mood, you can expect their menu to match! Excited about tasting their delights I watched the waiters bring trays of colorful samplings to the guests. The Kobe beef meatballs were so delicious and larger than you would expect. Every bite was memorable. In fact, all of their food had intriguing flavors. I have never seen Kobe beef served as meat balls!

Tom Cardenas, Vice President of Operations, of the Innovative Dining Group, happily explained why their restaurants are now named Sushi Roku 2.0. “Fourteen years ago there was only one pricy Japanese restaurant in Los Angeles, a restaurant which catered to big time producers and A-List actors but all of the others were ma and pa restaurants. Where do their agents, the other actors and the musicians eat? We wanted to take the restaurant’s ideas with food but maybe one notch below their price.

Our first Sushi Roku Restaurant opened on Third Street, near the Beverly Center, in Los Angeles. Fourteen years later we began thinking about our next step. After studying most of the other Japanese restaurants that have opened up over the years, we realized they are replicating our menu whether it is the Hanabi crispy rice cake with spicy tuna, seared albacore with crispy onion or the dish every Japanese restaurant offers- yellowtail with some kind of jalapeño. We were the originator of modern Asian cuisine and now what could we do next?

We thought of the time Microsoft took their company to the next level- 2.0 many years ago, we took Sushi Roku to the next level Sushi Roku 2.0. Let’s do something which has never been seen before. Our Innovative Dining Group spent one year developing this new concept and launched it at the original Sushi Roku in Hollywood. From there we brought the concept to every Sushi Roku restaurant.

This new 2.0 concept meant not only a new menu but a complete change of uniforms, service style and adding a lot of different elements like Microsoft did. Now we look at all of the other restaurants that were even with us as far as menus and popularity and say, ‘Come back up to our next level. We are not just another Japanese restaurant. Sushi Roku 2.0 is different!”

Corporate Executive Chef Hiroshi Shima considers their customer’s health with a wide selection of grilled and baked dishes on their menu. Chef Shima offers so many original ways to try Kobe Beef- Kobe Tataki wrapped Foie Grass with Poached Quail Egg, Kobe Yakiniku grill over blazing hot Charcoal, Kobe Beef Meat Balls in Lettuce Cups, Kobe Beef Potsticker, Kobe Beef Skewers, and Kobe New York Steak Toban-yaki “Japonais”. Some more of his other unique culinary creations include Chilean Seabass with Truffle Miso Glaze, Kurobuta Pork “Kakuni” braised for 8 hours, Filet Mignon with Ginger Teriyaki Sauce, Ji-Dori Free Range Chicken, and many more.
