Turkey Recipes for Everyday Meals

Next time you are in the grocery store pick up a package of smoked drumsticks or a package of fully cooked turkey breast. Half of your cooking is already done for you. Then just add the ingredients to it. Here are two recipes that work good for our family.
TURKEY DRUMSTICK CASSEROLE
Ingredients:
2 smoked turkey drumsticks
2 stalks celery
1 medium onion
3 carrots
2 15 oz. cans black beans
1 15 oz. can chicken broth
1 8 oz. box Zatarain’s red beans and rice
Directions:
In a large slow cooker, add turkey drumsticks with two cups water. Cook all day. Turn off cooker in evening and cool overnight. Next morning remove meat from cooked drumsticks and add turkey meat to the turkey broth from yesterday. Dice celery, onion, and carrots and add to the turkey mixture. Add black beans and chicken broth. Stir well. Cook until vegetables are tender. Add red bean and rice mixture. Cook until rice is tender. Note: you may desire fresh drumsticks. You may need to add more broth if the mixture appears dry before the rice is tender

TURKEY CUSTARD CASSEROLE
Ingredients:
3 cups dry bread crumbs
3 cups diced fully cooked turkey
1 cup chicken broth
1 cup milk
1 4 oz can mushrooms
2 eggs beaten
2 tbsp chopped onion
1 tsp salt
1/2 tsp pepper
Directions:
Preheat oven to 350 degrees F.
Mix all ingredients togeher and pour into an 11X7X1 in. baking pan. Place baking pan into a pan with hot water 1 in. deep. Bake uncovered or 60-75 minutes until a knife inserted comes out clean.
