Q: Trying to get a sense of how much avocado is in a california roll for nutritional purposes. Could it be more than 1/4 cup?
A: An uncut California roll uses 1/2 of a Haas avocado, cut into thin strips (see photo on the link below). The roll in the nori is then cut into thin discs about 1″ in height. So a full roll would be about 1/4 cup. A single piece though, is very small. A teaspoon maybe.

A: I sprinkle some sesame seed on some plastic wrap and then put down my rice, crab, avocado and cucumber, if you do not have a bamboo mat, a tea towel will do just put in down before the plastic wrap, even a magazine is fine.Roll it tight, and chill before you cut, this will firm it up and alot the rice to stick together, I am a former chef, worked in Japan and have made sushi for banquets were we had few mats and used some with and other without seaweed around them, regular sesame seeds are nice, black are more colourful and a combo is better, use what you have even parsley and chopped green onion tops will do.
