The white is basically the chickie. 97 per cent of the protein in an egg both from yolk and white, is digestible, which is a spectatular amount. The University of Boston did a controlled test that determined that the people who ate both the white and the yolk had basically the same amount of fat in their blood as those persons who ate only the white. Thank goodness for that because I always told my children to eat the whole egg! 🙂
