Gluten Free Family Kitchen Essentials

It has taken me several years of trying different brands & items to determine what my family likes best and what seems to be the easiest, healthiest, tastiest meals to prepare. Cost of gluten free products are very high. If you are like me, you probably don’t want to spend seven dollars on a bag gluten free pretzels if you don’t have to, but with having a child there are certain things like sandwiches, pancakes and pasta that are staples of the childhood experience. Here are some of the brands of items I have found useful, and then also other items I keep regularly stocked in my kitchen for cooking followed by a quick and easy chicken tender recipe.

Here is what my kitchen look’s like: ‘What’s In It’

Pamela’ Gluten Free Pancake/Baking Flour ( big bag – more economical) (I use this for cookies, pancakes, breading for chicken tenders. Any of Pamela’s products are wonderful.) Udi’s Bread for sandwiches (for sandwiches and toast, great for anything where bread is necessary) Ener-G Tapioca Loaf Bread (I use this one for its thin slices and texture. This bread makes really wonderful french toast, toast & grilled cheese sandwiches. It doesn’t hold together very well, but I still like it very much when toasted or used as french toast.)
Quinoa Pasta
Prego Spaghetti Sauce
Marsala Cooking Wine
Extra Virgin COLD PRESSED (Important) Olive Oil – healthy, bold wonderful flavor for cooking
Chicken Stock ( not broth ) Stock has much more flavor
Canola oil
lemon juice
light sour cream
butter ( salted )
ketchup, gluten free
dijon mustard, gluten free
real maple syrup Peanut Butter and Co. white chocolate peanut butter ( all natural, no trans fats ) corn flake crumbs, gluten free, used as bread crumbs
fresh minced garlic
onions
bags of jasmine rice
baby white potatoes
Sweet potatoes
fresh green beans
fresh zucchini
onion powder
garlic powder
sea salt and regular salt
ground dried thyme
dried oregano flakes
ground dried curry
fennel seed ( bottled )
Cinnamon powder brown sugar
white sugar or raw sugar
cans of pineapple chunks in juice not syrup
thin sliced chicken breast
lean ground beef
North Carolina Neese’s Country Sausage (preservative free)
nitrate free, gluten free all beef hot dogs
Bushes’ Baked Beans, Onion flavor
farm fresh brown eggs

Quick chicken tenders:( the extra virgin cold pressed olive oil is what gives such a delicious flavor to this dish.)

1. Cut up thin sliced chicken breast into medium pieces
2. Coat with Pamela’s flour & dash of salt
3. Heat extra virgin cold pressed olive oil to medium in sauce pan, just coat bottom of pan about 1/8 inch
( can add a bit of chicken stock and butter for additional hearty flavor, but not necessary)
4. Brown a couple of minutes on each side until done, be careful not to overcook
