A: The fact that its jerky means its been smoked and reduced down to jerk. Its not too fattening, but its high in sodium. I ate it all the time while breast feeding. I like the kind with tabasco in it. It has nitrites in it, but what doesn’t anymore? Its fine.
Cooking chicken in oven (moisture = fat ?)?
Q: I learned the other day that a lot of fat in beef is in the moisture – hence why Beef Jerky is apparently good. I love chicken – but I notices that when I cook it in an oven (after marinading etc) while it is very moist and succulent it feels very fattening. If I go to a KFC or something – where the chicken is much more dry – then it doesn’t feel as bad. So my question is – should I let my oven cooked chicken thighs (I’m not talking about cooking a whole chicken) ‘dry out’ – so that a lot of the fat is drained away ?thanksR
A: I found that oven cooking chicken was dicey so I don’t do it that way now. I use a “slow cooker” or Crock Pot.First I seer the chicken breast fillets in *butter*garlic*little oilput in wok and seer the chicken briefly….Add to pre-heated Crock Pot, and then with the left over in the wok; I add some chicken gravy (or any other preference)and heat in with the left over butter/garlic etc.This is then added over the top of the chicken breast fillets in the Crock Pot, and left to slow cook ~ *Variation: you can actually add some Mushroom condensed soup (I wld heat that with the left over butter etc in wok) and toss that in over top of chicken)Depending on the size of your meal is depending on how long it slow-cooks for.The food is tender and delicious, and not too much fat!
