Q: this will be kind of long, sorry…I made up a recipe myself for “health cookies” since I couldn’t find one with all the things I want. I want to include all the food groups so it’s a full meal replacement cookie. I made them, and they taste ok, but the texture is sort of “cakey” not a crisp cookie like I wanted. I want sugar-free and wheat-free.3 eggs1 C. dry powdered milk2 C. grated zucchini1 C. grated carrots1/2 C. walnuts3 T. oil1 and 1/2 C. dry oats1/2 C. brown rice flour1/2 C. sugar Twin1/2 C. raisins1 C. unsweetened applesauce2 t. vanilla1 t. cinnamon1/2 t. saltit made 36 cookies, and I figured the calories, fat, protein, etc…. but they just seemed too soft and not really “cookie-ish”.What would you add, subtract, or change to make them better?
A: Whats happening is your grated zucchini and carrots are making it really moist. What you should do is cook both of these first. If you don’t want to do that, use 1 cup zucchini, and 1/2 carrots…also more eggs makes for more of a cake like consistancy, use 1 egg you only need this as a binder. Please, Please, Please don’t use sugar substitue…its so bad for you…try less applesauce, and use all natural sugar (blonde turbanado) it will taste so much better if you do this. Do you think that eating healthy is putting chemicals in your food? or natural sugar that you’re supposed to eat in moderation…..sounds like a great recipe…think about what I said though.

They swept the area, in front of the Department of Veterans Affairs, with bomb-sniffing dogs and installed magnetometers in the middle of the street, put up barricades to keep pedestrians out, and took positions with binoculars atop trucks. Though the produce stand was only a block or so from the White House, the first lady hopped into her armored limousine and pulled into the market amid the wail of sirens. Then, and only then, could Obama purchase her leafy greens. “Now it’s time to buy some food,” she told several hundred people who came to watch. “Let’s shop!” Cowbells were rung. Somebody put a lei of marigolds around Obama’s neck.
